This Easy Beef Stir Fry is one of my favorite low This Easy Beef Stir Fry is one of my favorite low calorie meals that my whole family loves and is a staple for me on my 50 lb weight loss journey!

8 ounces 93% ground beef
½ cup finely diced onion
1 tbsp jarred garlic
2 teaspoons ginger paste
1 tablespoon olive oil
½ cup sliced celery
1 red bell pepper, sliced
3 cups cooked white rice or noodles
4 tablespoons peanuts (omit for less calories)

Sauce
½ cup beef broth
3 tablespoons hoisin sauce
2 tablespoons low sodium soy sauce
2 teaspoons sesame oil
2 teaspoons cornstarch

1.	In a small bowl, stir together the beef broth, hoisin sauce, soy sauce, sesame oil, and cornstarch until smooth. Set it aside so it’s ready to go.
	2.	Heat a large skillet over medium-high heat. Add the ground beef and chopped onion. Cook, breaking it up as it browns, until the beef is fully cooked and no longer pink. Drain any excess grease.
	3.	Stir in the garlic and ginger. Cook for about 1–2 minutes, just until fragrant.
	4.	Add the chopped celery and bell pepper. Cook for a few minutes, until they start to soften but still have a little bite.
	5.	Give the sauce another quick stir, then pour it into the skillet. Stir everything together and let it simmer for a few minutes, until the sauce thickens and coats the beef and vegetables.
	6.	Spoon over 3/4 cup cooked rice and finish with sesame seeds and sliced green onions if you like.�
Approx 463 calories and 29 grams of protein depending on brands used

I focused on higher protein foods through the day then some lighter cocktails in the evening.

1. Getting up early is easy the first week, but is still the hardest part.

2. The energy I have is amazing!

3. Water is key, but add some flavor when you’re bored. 

4. You really should track your calories. I don’t think you need to go crazy with macros but staying in a confirmed calorie deficit is key. 

5. Changing my mindset to be about doing this because I love myself has made a difference!
